As the days grow shorter and the weather cools down, it’s nice to stay in for a warm and healthy breakfast. La Jolla Lifestyle partnered with Michelle Winter-Nolte, co-owner of Mimi’s Kitchen, to make a farmers market omelet. Along with using fresh ingredients, what makes her omelet taste so good is sharp cheese from Small Goods American Cheeses & Provisions found at the La Jolla Open Aire Farmers Market. Her tip for the eggs is to add a little water to the eggs and add garlic to the sauteed onions and spinach. As a side, she has bacon and berries with rosemary on top. 2 eggs, beaten

1 cup spinach

Sharp cheese, chopped

1 onion, chopped

1 sprig rosemary


Saute the onion and spinach with garlic and cook until softened. Remove from pan and set aside. Chop the cheese. Crack the eggs, add a bit of water and beat them until combined. Pour into a hot pan. When the eggs are set on the bottom, add the spinach, onion and cheese on top. Flip the other half of the egg over the spinach, onion and cheese. Garnish with rosemary. Add fresh berries and bacon on the side.
