Cool Beans

Crafted locally by the bar team at George’s Level2, working to elevate the art of the cocktail, not only here in La Jolla but for all of San Diego.

Makes 1 cocktail.

The Ingredients

1.5 oz 8yr Demerara rum

.5 oz Mezcal Joven

.75 oz applewood cold smoked lime juice

.75 oz tamarind syrup

1.5 oz house tepache

The Method

Add all ingredients into a mixing tin, add ice and shake. Strain into a glass, add pebble or crushed ice, garnish with mint crowns and a pineapple frond.

Notes

Cold smoked lime: Cut limes in half, applewood cold smoke for 30 minutes, juice limes.

Tamarind: George’s makes their own with a little mole spice, but you can purchase a similar product.

Tepache: George’s own fermented pineapple drink, but there are a few bottled options out there.
